The award-winning Sha Tin 18 presents authentic Dongguan and Northern Chinese cuisine from four open kitchens, featuring two signature dishes crafted with culinary excellence and live performances, creating an unforgettable dining experience for guests.

The Traditional Peking Duck* (HK$868 for a whole duck and HK$568 for half) is expertly carved tableside and served in three ways: crispy duck skin with sugar, and duck breast meat or duck leg meat wrapped in a steamed pancake, alongside leeks, cucumber, soya bean paste, and a touch of garlic, this classic delicacy is a must-try for connoisseurs of authentic northern Chinese cuisine.

For a dramatic dining experience, the Flambé Rose Wine Barbecued Pork*, Lard Rice (HK$188 per person, minimum of four guests) is presented with a flourish. The tender pork is marinated with honey, rose wine, soy sauce and various ingredients for optimal texture and taste. The highlight of the dish is the chef's live performance, where flaming rose wine is poured over the barbecued pork, filling the room with the delicious aroma of rose wine and slightly charred barbecued pork. The dish is served with fragrant rice that guests can enhance by mixing in specially prepared lard and soy sauce. The lard is specially cooked with ginger, red onion and spring onion which elevates the taste when mixed with rice.
