Executive Chinese Chef Chan Hon-cheong, a native of Macau, has partnered with Long Tin, a well-established cured meat brand based in the Red Market in Macau for over half a century. This collaboration introduces two exclusive preserved sausages - bird’s nest preserved pork sausage and 30 years aged sun-dried tangerine peels preserved duck liver sausage.

A deep appreciation for culinary tradition unites Chef Cheong and Mr. Mok Siu Kei, owner of Long Tin, especially in their dedication to Macau-style preserved meats. This specially curated tasting menu honours the seasons through various traditional cooking techniques, each bringing out the unique flavours of quality preserved meats and the balance with other ingredients. The Long Tin cured meats seasonal menu is available from now to 15 December.

Building upon the classic steamed rolls, a new technique is employed to transform the dough through artful coloration: the red dough is made from red rice, while the brown dough incorporates dark soy sauce. The preserved sausage is dipped in abalone sauce before being rolled, enhancing the flavor and making it easier to differentiate. Each roll includes a piece of abalone, introducing an element of refined indulgence to the dish.

This creation pays homage to the time-honored winter tradition—stir-fried celery with cured meat. This time, Chef Cheong has specially incorporated bird's nest sausage into the egg tart mixture, adding a subtle savory note that enriches both taste and texture; while adding 30 years aged sun-dried tangerine peels preserved duck liver sausage into the fermented beancurd pastry. These refreshing combinations offer a delightful twist on timeless favorites.
To complement this seasonal menu, Chef Cheong has crafted a distinctive homemade tea, steeped for six hours with 30-year aged sun-dried tangerine peels, hawthorn, and preserved plums. This tea quenches thirst and helps relieve heaviness and indigestion.

From now until 15 December 2025, Executive Chinese Chef Cheuk Man Chung of Tao Li restaurant presents a selection of hearty dishes featuring hairy crabs meticulously chosen from China's esteemed Jiangsu province breeding grounds.

The Steamed Jiangsu Hairy Crab with Perilla Leaves and Zhenjiang Vinegar at Tao Li embodies the most refined preparation, allowing the hairy crab's irresistible essence and distinctive fragrance to take centre stage.

Lovers of this prized crustacean should not miss the Steamed Minced Pork Dumplings with Hairy Crab Coral. Each bite unveils a harmonious blend of succulent minced pork and rich, creamy hairy crab.

Additional highlights from the menu include Braised Vegetarian Shark Fin Broth with Hairy Crab Coral, Diced Seafood and Bamboo Pith; Braised Prawns with Hairy Crab Coral; Sautéed Vegetarian Shark’s Fin with Hairy Crab Coral; and Braised Egg White Dumplings with Hairy Crab Coral, Diced Scallops, Shrimps, Water Chestnuts and Caviar.
