DIY a refreshing Watermelon Agua Fresca to chill out this summer

“Agua Fresca” as fresh water in Spanish, is a ubiquitous drink in Mexico. The combination of the fragrant mint, the slight tang of the limes with the ripe watermelon will keep you from melting this summer!

 

Preparation Time: 25 minutes
Setting Time: 1 hour
Servings: 3 cups

 

Ingredients
4 heaped cups watermelon, seeded and cubed (about 3 pounds)
1ΒΌ cups filtered cold water or coconut water
3 tablespoons freshly squeezed lime juice (about 1 lime)
1 teaspoon maple syrup, agave or simple syrup
4 fresh mint leaves for garnish
1 lime, quartered or thinly sliced for garnish

 

Method

  1. Using a high-speed blender, combine watermelon and cold water and blend until smooth.
  2. Pour through a strainer or sieve into a Pyrex measuring cup (4-cup) or glass pitcher and remove watermelon pulp.
  3. Stir in lime juice, maple syrup and garnish with mint and lime wedges. Refrigerate for at least an hour.
